Panchrangi Dal Masala is one of my favorite dal recipe of childhood. This recipe is made by my mother on weekend day with Puri.

Puri-Dalma is a traditional and delicious combination of Puri Dal with vegetables loved by mostly in coastal areas of Odisha. Mother at times prepared without veggies. This dal is very tasty and goes well with any other recipes. The dals used mostly are, green moong, split yellow moong, urad, chana, masoor, arhar dal.

Ingredients and spices that need to be Take to make Panchrangi Dal Masala:

  1. 1.5 cup mixed dal
  2. 1 big onion chopped
  3. 1 Tbsp grated chopped ginger
  4. 3 big cloves garlic minced
  5. 1 green chilli chopped
  6. 1 cup chopped tomatoes
  7. 1 tsp turmeric powder
  8. as per taste Salt
  9. 1 1/2 tsp coriander powder
  10. 1/2 tsp red chilli powder
  11. 1 tsp cumin powder
  12. 1 tsp garam masala
  13. 1 Tbsp ghee
  14. 1 Tbsp mustard oil
  15. 1 tsp ponch phutan
  16. 1/3 tsp hing powder

Instructions to make to make Panchrangi Dal Masala

  1. Soak the dals after cleaning and and washing for 30 minutes.
  2. Take soaked dals and water and turmeric powder, in a pressure cooker and cook for two whistles. Set aside to release pressure naturally.
  3. Heat oil in a kadhai. Splutter ponch phutan, add hing and saute for 30 seconds. Add chopped onion, ginger, garlic and green chillies. Saute till rawness of masala gone.
  4. Add chopped tomatoes, coriander powder,cumin powder red chilli powder and salt. Cook till tomatoes are mushy and oil is separated form masala.
  5. Mix garam masala and 1 Tbsp ghee and saute for another 30 seconds. Mix the cooked masala with dal in cooker. Mix well and allowed to boil. Adjust the water and seasoning.
  6. The Panchrangi dal masala is ready to serve with roti/puri/parathas/steamed rice.
